PURPLE!!!

You might think my blog threw up purple, but I LOVE PURPLE!!  Its quite obvious if you can't tell.

I'm just relaxing at home on Saturday morning, watching a little HGTV and thought I would update my blog since I can't go fix a backyard, or paint a bedroom....like I am being inspired to do while watching HGTV.  Living in an apartment - can't exactly do all of those fun things like you can when you own a home...couple more years!

This is my last Saturday for the next month that I can just lay around, do a little laundry and relax so I'm enjoying every single minute of it!  I'm very excited for the next month ---

Best Friend's Wedding!  Next week she will be Mrs. O'Conner!!!!

Mr. KU's friend's wedding...

Going away party for a dear friend at work...

Bridal Shower & Bachelorette Party for another dear friend Shelby AND

our trip to NYC over Memorial Day Weekend!

As you can see the weekends are filling up fast, but I am soo excited to share in these special times with my friends!!!  Spring/Summer has finally arrived!!

Memoir Monday

FINALLY!!!!!!!!!!!!!!!!

My best friend was in town this weekend for her cousin's wedding.

We FINALLY got to hang out in person, catch up and just talk not over the phone!  Yes... we do talk more than most best friends - probably 2 or 3, (well maybe more) times per day....either on the phone, email, text, whatever the form of communication may be....but nothing beats staying up late and having a little girl talk!

I'm definitely set now for a while, even though I do get to see her in 2 weeks for our other best friends' wedding!

THEN wedding season will have officially started.  Between Mr. KU and I we have about 10 weddings this year AGAIN!  I thought last year was crazy...this year may be a little bit crazier!

Here is a pic from a while ago!  Also - check out her blog about buying a house and fixing it up.  You could get a lot of great tips!

Tuna Steaks & Zucchini

Last Sunday evening Mr. KU and I decided to grill out because the weather was so nice!  Since we are really trying to eat healthy and watch what we eat we decided on tuna steaks and veggies.  His veggie of choice is Asparagus and mine was zucchini & squash.

Mr. KU starting the grill

Zucchini Recipe
1 Zucchini
1 Yellow Squash
1/2 Onion
Garlic Powder
Butter (optional)
Parmesan Cheese
1-2 eggs

- Slice Zucchini & squash.  Don't worry about peeling
- Slice Onion - don't have to use the entire onion, depends on your love for onion.
- Melt 1 tbsp of butter in a pan on medium heat.
- Saute onions, zucchini & squash until they are somewhat soft.
- Mix eggs like you would to make scrambled eggs
- Add to pan and continue mixing until the eggs become the same consistency as scrambled eggs
- Sprinkle with garlic powder and Parmesan cheese for a few minutes

Serve & Enjoy!

A few weekends ago...

Such a wonderful weekend!!!!!!!!!!!!!!!!!!!!!!  The weather is FINALLY starting to turn around in Kansas!  It's amazing how up and down the temperature can be day to day.

This weekend was full of relaxation, catching up with great friends and enjoying the BEAUTIFUL weather!!  Quick Run-down:

Friday - Mr. KU and I spent a relaxing evening at home.  We cooked dinner and watched the "The Fighter".  AWESOME, movie if you have not seen it yet.  I highly recommend it.

the fighter

Saturday - got in an awesome workout and then Mr. KU and I got massages!!!  It was soo relaxing and needed!  Then because the weather was so nice we ate at this Mexican restaurant off of Mass Street and enjoyed the weather... with a couple of margaritas.

Then, I headed to KC for my friend Diana's bachelorette party!  She got some fun gifts!  I can't wait till its my turn, not gonna lie!

Sunday - Impromptu, Mr. KU and I went to the Royals Game.  The high was 90 degrees!!!!!!!  I was sweating in my jeans and tshirt, but I enjoyed every minute of it!  They won in the 12th inning.  It was a great game.  After the game we came home and grilled tuna steaks.  They were delicious!  And we sat on the back porch and watched a storm roll in, ended up with golf ball size hail!  Only for a few minutes, but it was crazy!

Very creative!!!

Long post, but wanted to catch everyone up on my life.  How was your weekend?

Wednesday, April 6

Soo sorry its been so long!

Well, needless to say, life has been a little busy lately.  Let me update you on a few things that have been going on around my household.

I've finished the Herbal Cleanse...it was ok.  IF nothing else it forced me to really think about what I'm eating, eat a lot healthier and take note on calories, fiber, etc.  Which is what I have been doing a lot of lately...not so much the counting calories part, just making sure I have a vegetable with dinner, fruit throughout the day, a healthy breakfast, AND lots of water!  And I am feeling A TON better!

Plus, Mr. KU and I have loved having our membership at the gym.  We get there at least 4 times a week and I've already lost 3 pounds!!!  I know I said I wasn't keeping track and this was about being healthy but I'm still stoked about the 3 pounds.  I would love to lose 7 more by the end of April but we shall see.  I think a 5k is in our near future.  I'm trying to convince him to do a 10K in the fall.  Next year I definitely want to do another half marathon!

I've also been super busy with friends lately.  My friend Liz came in town from St. Louis this past weekend and we had a lot of girl time to catch up on each other's lives.  It's amazing that no matter how long we go without seeing each other or talking, we pick up right where we left off.  I LOVE THAT!

Bachelorette parties, travel, weddings and more will soon be taking up a lot of my time.  But they are for family and some of the greatest friends in the world!  I can't wait to help them celebrate their special days and be a part of their lives.  I feel truly blessed!

Hopefully getting my pictures loaded to my lap top tonight and more posts to come!

THANKS FOR STOPPING BY!
